Bengali Traditional Fish Recipe

Another famous Bengali Traditional fish recipe Ilish macher matha diye pui shaker chorchori or malabar spicach curry with hilsa fish head. It is also known as Bengali Chanchra.
Ilish Macher Matha Diye Pui Shaker Chorchori - Famous
Ingredients of Ilish Macher Matha Diye Pui Shak:
1. Pui shak/Malabar spinach (300 gm).
2. Pumpkin (200 gm).
3. Potato (1 big size).
4. Pointed gourd (2 pc).
5. Fried hilsa fish head (1 pc).
6. Ginger paste (1 tsp).
7. Panch phoron (½ tsp).
8. Turmeric powder (1 tsp).
9. Slitted red chilli (4 no).
10. Red chilli powder (½ tsp).
11. Cumin powder (1 tsp).
12. Salt (as per your taste).
13. Sugar (as per your taste).
14. Mustard oil (4 tbsp).

Preparation of Malabar Spinach Recipe with Hilsa Fish Head:
1. Add 4 tbsp mustard oil in hot pan.
2. Fry potatoes and pointed gourd very well.
3. Add little bit of turmeric powder and salt when fry. Keep aside.
4. After that add ½ tsp panch phoron and fry it for 15 sec.
5. Add 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp ginger paste, and ½ tsp red chilli powder in a bowl.
6. Add some water and make smooth paste.
7. Add the mixture in pan.
8. Add slitted red chilli, ½ tsp salt and ½ tsp sugar in it.
9. Cook for 1 min in medium flame.
10. Add fried fish head, pumpkin, Malabar spinach, fried potatoes and fried pointed gourd. Mixed it well.
11. Now cover it for 10 min in medium flame.
12. After 10 min stir it well and cook for 5 min in high flame.
13. Add 1 cup water. When boiling close the lid for 10 to 15 min in medium flame. Stir between twice.
14. After 15 min cook in high flame for 2 min.
15. Put off gas oven. Serve hot Ilish Macher Matha Diye Pui Saag er ghonto with hot rice.
